Sushi and Sashimi
Sushi
is any of a variety of combinations of raw seafood with vinegared rice, while
sashimi is simply sliced, raw fish. The origin of raw fish consumption
in Japan actually began with a food which might be considered the extreme
opposite of raw - the pickle. The practice of pickling made its way to
Japan from Southeast Asia sometime during the 7th century, and the Japanese
immediately began to apply the process in new and interesting ways. One of
the most popular was a food which was the result of pickling raw fish wrapped in
rice. However, as the process was quite lengthy (anywhere from a few
months to a year) newer, faster pickling methods were soon developed.
Sushi remained a largely pickled affair until the early 19th century when an
enterprising Japanese chef began selling snack-like morsels of raw fish and rice
from a portable stall in the city of Edo (present day Tokyo).
This innovative fare (recognized by many as the world's first modern sushi)
was a great hit and similar stalls became and remained popular in Japan right up
through World War Two. Sushi is today available in Japan in
supermarkets and restaurants, as fast food and delivered to your door like
pizza. The popularity of sushi has grown beyond the borders of
Japan with sushi bars and restaurants appearing worldwide wherever tasty,
high quality seafood is enjoyed. Sushi is commonly eaten with soy
sauce and spicy green wasabi horseradish. Sushi is normally
seen eaten with chopsticks, however true aficionados in Japan frequently use
their fingers.
